Activity Monitor is task manager for Mac.
Finder is equivalent of Explorer (use arrows to navigate, rather than Enter... as this renames folders).
System Preferences is equivalent of Control Panel.
Only way I can find to disable Mail is by giving the executable no permissions: http://superuser.com/questions/337134/how-do-i-stop-apple-mail-from-opening-because-of-ical-appointments

Installing stuff
Just download the .dmg file, mount it, then drag it into Applications folder. After that you can unmount the dmg (by dragging to bin).
Installing eclipse: download tar.gz, double click to unzip, drag eclipse folder into applications, then drag eclipse executable onto dock.
Pkg "can't be opened because it is from an unidentified developer". Solution is just to ctrl+click and select "Open".
Installing p4d so it runs on startup: http://kb.perforce.com/HardwareOsNe..rkReference/OperatingSystems/Mac/UsingLaunchd
